  1. I don't have much of a rooting interest in either team, although I kind of like that Mahomes kid so I'm leaning toward Kansas City. But what I'm really cheering for is the shrimp, sweet and spicy meatballs, enchiladas and chicken wings.

    1. I’m rooting for Mahomes, but don’t really care. Not sure if I’ll even watch. I’m taking it as an excuse to make your super crispy wings, though, and looking forward to those.

      1. Per usual, I'm in Portland for the game. One of the hotels I stayed at before had a special of duck wings. It was pretty amazing. I almost booked myself there again this time in the hopes they would have it again.

        1. How were the duck wings prepared? I’m imagining a sweet sesame ginger glaze or something of the sort.

          1. alas, i don't quite recall. if anything, there wasn't much of a glaze or sauce at all, only light seasoning. just beautifully crispy and succulent duck.

  2. I am preparing for our employee party at the joint. We close to the public at 3 and reopen for the staff at 5. I am roasting (reverse sear method) a bunch of New York Strip Roasts with a port au jus. Smoked Gouda Mashed Potatoes, Herb Roasted Rustic Vegetables, Honey-Pepper Buffalo Wings, BBQ wings, Bacon Wrapped Huli Huli Chicken Thighs and other misc dishes. Raffling off about $1500 in gift cards we acquired with other restaurants (trades). $500 cash in play on the big board. Each staff member gets 2 squares for free. Brought in a couple bartenders from other joints. My wife and I are basically the only "employees" who work it. Everyone else gets to mingle and have fun. It's a lot of work, but I will be free to have a Roknar Rye Old Fashioned by about half time.

    1. By even mentioning a rye old fashioned, I think you just got banned from being able to enter Wisconsin.

      Jokes aside, that sounds amazing.

      1. My favorite old fashioned is with rye whiskey and using a ginger simple syrup. Cuts through the sweetness a bit. Yes, I would never order it in Wisconsin!
