Okay, Chopped contestants. What was your best re-purposing of your leftovers?

I should add, though we cooked a little more things than a normal dinner, we didn't have much left in the end.

  1. I've added the WGOMXMASMIX to the podcast for the Holiday season. We have limited hosting space, so I can only keep one episode of the actual podcast there at the same time, but maybe that's a good thing.

  2. So far this year, the cheese grits with a runny egg on top yesterday morning were very good and the mashed potato fritters I made for lunch were fine, but not worth the trouble.

  3. It's just been sandwiches so far - we had a lot more turkey leftover than anything else.

    I think I'm going to try turkey enchiladas tonight, and maybe stock tomorrow, and that'll be the end of the bird.

    1. We're doing a reverse Thanksgiving in a way. We've never actually cooked a bird before, but the wife wants to practice. Figure we'd wait for the price to drop a bit a swoop up a smallish bird to give it a shot.

      1. Did likewise. I made sauce in the Magical Pot (6 anchos, 6 guajillos, a chopped onion, 6 cloves of garlic, chopped, 3 chipotles in adobo, tbs each of smoke paprika, ground cumin, granulated garlic, granulated onion, salt, sugar, tsp oregano, 3 cups chicken stock, can of chopped tomatoes).

        stem, seed and toast the peppers. Saute the onion and garlic, add all the other ingredients, stir to combine, then cook on high pressure for 15 minutes and allow to cool on natural release. Blend until very smooth, then fry for a few minutes in a couple tbs olive oil. Makes about 6 cups. Has a mild kick but is more fruity and smokey than spicy.

        Enchiladas rock.

    1. I got to have a distanced dinner with Alan (the Phoenix owner) last night. My sources tell me he's deep into talks about acquiring Dan Haren and Joe Nathan.
