March 24, 2021: Congestion

There's a worldwide backup at the ports due to a number of reasons but mainly pandemic. It'd be kind of fascinating if I didn't have to have daily meetings with customers on how backed up their material is.

  2. Speaking of sandwiches. Today’s Japanese omelet was more of a success, but still sandwich fodder. Goat cheese and salmon with hot sauce and mayo on toasted breads. Delightful. Too bad the earl died in a horrible social media accident. 12/10

      1. If I had the special pan I’d be in business. I’m making fakey version in my round pan, but nonstick is essential. Basically, whip up some eggs really fluffy with no dairy, add seasoning of your choice (Japanese folks would use dashi or soy or ...?!?) and then ladle in just enough egg to coat the bottom of the pan. Let set over medium low heat, fold top half over bottom half, move folded eggs up to the top half of the pan and, while holding the pan at a slight angle add a couple more tbs eggs to the bottom of the pan. Gently lift the already cooked portion to let a little fresh egg coat the underneath side of the done eggs and then fold the top half over the bottom and repeat until you have a lot of folded egg goodness. Flip over if the bottom is more browned than the top. Slice and enjoy.
