CHILI!!1!!11
Nothing earth-shattering, but still, an incredibly thorough and informative look at one of my top 5 favorite meals.
I'm making a (instant) pot of Texas red for a chili cook off at work on Thursday. I expect to dominate.
Slow cookered us some (and made cornbread muffins) yesterday. Looking forward to leftovers, over hot dogs, and over cheese fries these next couple days.
Might be a bad week for losing weight.
I made Instant Pot lobia (or chawalie) for our monthly office potluck on friday. Mmmm.
We make a quick chili every other week or so by combining (gasp) canned black, pinto, and red beans, a can o corn, onion, garlic and (gasp) a can or two of hatch red chili sauce (here the real deal is to look for actual new mexico hatch sauce that has nothing in it but chilis) all thrown in the crock pot early in the morning and cooked on low. Served with a dollop of sour cream, a splash of cheese, and a home made crispy corn tortilla (0ven baked tortilla chips). I know, I know, where's the meat? Yeah, this one is pretty solid without added meat, but even better with some pork shoulder.
I'm calling bull on this part, however:
if you find yourself making chili with tomatoes in a plain cast-iron pot, the fruit’s acidity may react poorly with the metal, leaving the chili with an off taste.
I have made chili and other dishes, with tomatoes, many times in my cast iron dutch oven (no enameling). Never, ever, ever had an "off flavor" from the interaction.
some folks have opined that cast iron may leach iron into foods, which is not necessarily a bad thing, particularly in poor countries where access to iron-rich foods may be scarce. But my pot is well-seasoned, and the acidity in tomatoes added to a chili or a dal or curry has never led to off flavors.
Huh. I've always heard that 'bare' cast iron and acid produces rust in the pan not "off" flavor. Likewise, I've also always heard that cooking in cast iron has the health benefit of adding iron to your diet.
Tomorrow I’m making the (delicious) green chicken chili posted here a number of times, but this makes me want to make some red chili with beans, too. Considering highs will be around 80 degrees here all week, I’m not sure this is the best time for double chili, unfortunately.
Heh, highs in the 80s plus beans of any kind for dinner is a recipe for a train to toot town (that we board almost every week april to november).
in lieu of fixing the toilet (waiting on Amazon delivery tomorrow), I got roped into helping the missus rearrange furniture. Moved a big-ass bookshelf from downstairs to upstairs, a small bookshelf in the opposite direction. That was fun. Ummm....
Wanna help me move a 51" projection screen TV down the stairs?

Im watching the Grammys and Im in that stage of life where I don't know any of the artists except for Bruno Mars.

Definitely the best one in a long, long time with just the right amount of trolling (oh no, these idiots can't really let Reigns win again, can they?). Spoons, Ruby Riott was dating Arik Cannon last year, so I saw her wrestle at First Avenue.
Well, huh. I watched some of her stuff in Chikara. I didn’t realize she had been here.
This week's Judge John Hodgman verdict in the NY Times magazine makes me think of several people here.
