Off to Ft. Myers today for five quick days of beach and sun. No Spring Training, but that's what you get when someone else books the vacation. Oh well, traffic should be better at least.

Made yogurt in the Instant Pot yesterday. Mmmm.
Good flavor and thickness, but some textural issues. I didn't get all of the "skin" off before adding the starter (it broke up when I tried to scoop it out). Not sure if that was the problem but there are some specks of toughen proteins throughout. Like the pot cooked the milk too much?
Did you do it directly in the pot, or was it in a bowl inside the pot?
Also, was it good enough to be worth the work of making it yourself?
made it directly in the pot. When I washed the pot, I noticed some overcooked/curdled milk adhering to the circumference at the bottom, suggesting that maybe it got too hot.
I only made a quart, so that might have been part of the problem??
Yes, the flavor was spot on with the purchased (organic from Costco) and the thickness almost right. I will definitely try again. But if I can't get the texture right, I won't continue.
I may look to finding heatproof bowls or jars to make it in. Steaming the milk rather than heating it directly may be the way to go.
the process is simple: heat the milk in the machine per instructions (basically, pasteurizing). Remove the skin and let cool to tepid (under 115 deg. F). Temper some starter and mix in. Return to the machine and set the yogurt setting. I upped the time (defaults to 4 hours) to 10 hours because work. Done.

That's something I've been meaning to do, since my kids eat yogurt every freekin day for breakfast.
Speaking of the Instant Pot, this recipe worked out well. I used Ancho, Arbol and New Mexico chilis. We'll see how it does in the voting, though, since it does have a nice kick to it. Nothing extreme, but some people just can't handle anything spicier than ketchup.
Moral dilemma: Is it bad form to vote for yourself in a chili cook-off?

Is there a reason to have that press conference, besides content for the NFL Network? What kind of news is going to come out of that?
