Art's a good guy in my book. About ten years ago he performed at Orchestra Hall in Minneapolis. After the concert, which ended fairly late, he came across the street to the restaurant where I was working. We were just about to stop service, but the receptionist seated him and his group. Nobody back in the kitchen complained too much, even though we were wanting to break down our stations and go drinking over at the Local after a particularly long shift. I suppose we lost an hour of drinking time, but Art made it worth our while - he sent back a $50 tip for each cook, the only time that ever happened to me. You get a tip as a cook from somebody, they're a class act forever in your eyes.
