Yesterday was a long, long day. I got up at 4:30, I was at work by 5:30 and left the office at about 8. I got home and I was tired. But, I stayed on the diet and I am down 0.5 pounds this morning. I figure that Mom and Dad's scale is about 2.5 to 3.0 pounds heavy, so I weighed in at 262.0, but I think on the home scale I'll be under 260.

I took the day off yesterday to recover from the Deposition. Exercise was not in the cards, but I did make a lovely lentil salad (serve warm or cold).
1 lb of brown lentils. Rinse well, then cover with one quart of good-quality vegetable stock (in my case) or chicken stock. Let soak for at least one hour. 5-6 hours would be ideal. Bring to a boil and then lower to a gentle simmer for 20-25 minutes, covered, stirring occasionally. Remove from heat and let cool in the pot, covered.
Serve with a nice squirt of dijon mustard vinaigrette, heavy on the mustard. I used about 2 tbsp dijon with lots of fresh-ground pepper, two big pinches of kosher salt, an equal amount of sugar, 1/4 tsp ground fennel seed, two tbsp or so red wine vinegar, and a combination of extra virgin olive oil and canola oil (to lighten it up), all poured into a squeeze bottle (I used an empty dijon mustard squeeze bottle) and shaken vigorously to emulsify. (Start with only half of the oil and vinegar to get the emulsion going).
This was really good on its own. I served with hummus and cut up veggies, and fruit (apple, kiwi, grapes) and, truth be told, some cheese and salami.
But some grilled or broiled shrimp would be awesome on top of this salad.
Good job, Stick. I got home last night ready to blow off my workout, but then my daughter started in on me about needing this and that for school and I really didn't want to deal with it (it was obviously a reopening of a conversation she'd already had with her mother and found unsatisfying) so I changed and jumped on my bike for a ride just to blow off steam. I went half an hour and wanted to go longer but it was getting dark, so when I got home I did another 15 minutes on the Health Rider (upright rowing machine thingy). I'm really getting to like my workouts. I know it's selfish but in my situation I have to be selfish about my health now. That's what the doctors tell me, anyway. At cardiac rehab today we're going to start adding in some strength training so I'll get to start mixing things up a little bit more, which will be nice.
I got up dark and early this morning to try to start doing the Wii Fit workouts to get some semblance of strength into my legs, but the stupid rechargeable battery pack wouldn't work so I couldn't do it. It was a pretty disappointing start to my day. I'm going to get a new one and get started on it this weekend, though.
Unbelievable weather this morning in the Twin Cities. I got in a 26.5 mile bike ride that took me along the creek, through the U, across the Stone Arch Bridge, under Target Field, and around the lakes. A very, very satisfying start to my day.
After reading yesterday that I should get exercise 6 days per week, I ws going to whine about my lack of time. After reading this post, I am glad I didn't!
It is difficult to have the time. Work, family, sleep, etc.
I run 2 mornings per week and once on the weekend. I need to figure out a way to be more active the rest of the week. Whether it is walking the dog after the kids go to bed or doing some situps in the morning, I need to step it up a bit.
Whilst in Minny this last week, did the Victory 5K in No. Mpls on Monday (Weber Parkway), then an open water swim on Tuesday at Square Lake (north of Stillwater).
There was a nice chop on the lake, so the swim was kinda tough (had to switch to breathing on the lee side of the wave - learned this by taking in some lake water).
But the next day had a huge knot in my shoulder - ran 4M on Wed, but it was there. Hope it clears out before our long run this Saturday (10M).
