I can't explain why, but this new year feels like something that should be waded into. So far so good.

My breakfast malaise took a bit of a vacation this morning. I woke up early, and walked to the whole pay check 3 blocks away, just like the good old days, and bought bacon, eggs, cheddar cheese, and some green onion. I shredded some taters (really, let's be honest here I warmed up some frozen hash brown shreds that had been hanging out in the back of the freezer), and warmed up the waffle iron. I greased up the iron with a bit of butter and threw the bacon in the oven. Once all the hash browns were waffleized I topped them with hatch green chili and shredded cheddar cheese and dumped that mess into the broiler. Meanwhile I fried a couple of eggs over easy and once the chez was melty and maybe a bit browned I assembled a stack of bacon, eggs, chili and potato. Just delightfully great. Now I'll crawl back into my cooking ennui.
Be still my heart.
Beautiful ennui.
Since I'm the only one here {EDIT: Hello bootsy!} I'll just go on. Having climbed out of my hole for a bit I decided that I should make the KA pan pizza. Health be damned. I'm going to make two tonight ---> Smoked bbq chicken with caramelized onions and spicy peppers, and onions and taso with goat cheese on top of a sweet potato cream sauce. I'm going to eat like a g-d king tonight. I'll pass on the salad until tomorrow. When the diet begins. Tomorrow.
{EDIT 2} These are also my home grown s'taters. I'm excited.
Atta boy, meat. The diet can always wait.
Got a black bean soup with ham hocks making my place smell like heaven right now. Gonna top it with sour cream and scallions and tuck in.
Its a shame we had to bury Hungry Joe on Bean Hill.
lol π
Eat it, jobu.
I love you guys! π€£
Gorgeous!
I saved about 1/3 of my bread dough yesterday. Planning KL-A-style broiled pizzas tomorrow.
Streamed the first two games of Concordia St. Paul's b-ball this weekend. They split non-conference road games with U of M Crookston. They won by 20 on Saturday after trailing by 2 at the half. Nephew Jax started and scored a dozen, grabbed 6 rebounds and added 2 steals and an assist. They lost today in overtime. Jax with 13, 4 boards, 3 assists and 2 more steals. CSP has two upperclassmen guards that are way too ball dominant for my taste, and when their shots aren't dropping (like today), the offense gets really hard to watch. I wish my nephew was a little more aggressive, but he has always been an unselfish player, for better or worse.
They now begin a shortened 14 game conference schedule in the Northern Sun Intercollegiate Conference, where they will play same site back-to-back games on consecutive days. Be fun to see what becomes of the Golden Bears in the coming weeks. (Also found out that this mini-season won't count as a year of eligibility for the athletes.)
I caught the SCSU-UMD hockey game yesterday. Five of the six goals in regulation were on the power play. In the third period the Huskies scored twice on the same major penalty, but lost it in OT 4-3. They were ranked #6 going into this weekend (UMD wad #4) and they should be able contend for a conference title again this year.
I'm only kinda kidding when I say that I read your initial statement as you caught some new disease.
I have not really followed sports much during the pandemic. I figured SCSU would be better this year, but they are definitely doing well. I need to start paying more attention to this squad.
Folks, my kitchen (and therefore my living room) smells just divine with the aroma of pizza. Wish y'all were here.
