Should I, or shouldn't I? Joint #2 One of the highest traffic corners in the county. Building is getting stripped down to the bones as we speak. Owners are willing to take the build out as far as I want with a friendly lease. Over the past 2 weeks, my wife has gone from "no freaking way!" to "I can pick up some extra shifts at work to save up some cash for the new joint"
I woke up at 3 am this morning and pretty much outlined the concept and the bones of the menu. Am I crazy?
Okay, "Should I, or shouldn't I?" and "Am I crazy?" are two different questions.
Fair enough. They are two questions and you answered neither. I mean, obviously the second one is a "yes". It's the first question that I am pondering.
Do you have a strong support group? Because you and Mrs. z aren't doing this yourselves, I hope...
Staff is rock solid right now . I have 3 awesome salaried chefs, 2 awesome salaried Front of House Managers. If we pull the trigger, I have 3 strong in house candidates to be sous chefs. I also know 2 very experienced restaurant managers who are already fighting over the GM position at the new joint.
My only concern is I'd have to play eenie-meenie-miney-mo to decide which to visit.
Also, it halves my chances of you being there when I stop in.
Wait until he gets his Food Network show. He'll never be at either joint!
I think you start with the end goal. What do you want out of life in 5-10 years and how do you get there. What does 62 year old Zooomx think of this decision?

Late one night many years ago I told you you were crazy, but it seems to have worked out so far. If it feels right, do it.
Great question. If we stay status quo, I see myself working 50+ hours a week until I am 62-65 ... then back away to an oversight position. If we do a 2nd location, I would probably be done working over 45 hours in the next 3 years. I am 55 right now. Also, for as much success as we are having at the current joint, I am growing bored. I do best when I am forging new ground. I do not do well with the status quo. My team at the current joint can maintain standards and we already experimented with me being gone during our winter consulting project. They were fine without me.

The main concerns I would have would be working capital (interest rates are still rising) and the local economy (we are still looking at high odds of a recession nationally).
That, and working 50+ hours seems like a recipe for burnout. But then, I was a state employee... (joking; I actually worked lots of 50-hour weeks).
Luckily, our county is somewhat recession proof. Very diverse economy of manufacturing, health care, robust tech school, retail and tourism. Right now we turn away between $300k and $500k in business each year by turning away take out and catering as well as slowing down seating when the kitchen is getting slammed. I think 2 more restaurants could open right now and it would barely affect us.
On another note: The local "Best of the Lakes Area" nominations just were announced. We are a finalist in 10 categories. Previous record was 8. Our brand is on fire.

That kind of leads into what I was thinking: how are you going to feel if you don't do it? I suspect you know the answer to that question, and maybe that's all you need to know.

This episode has been out for a couple weeks, and the clip has no spoilers. I'm not a musical fan as such, but they did a pretty decent job with it. The singing is certainly better than Once Again with Feeling, although I noted a little autotune at times. And yes, they did have a "legitimate" excuse to spontaneously break out into song.
Sooo, ridge beam in, rafters attached appropriately.
But they had to remove plywood and the insulation (pink fiberglass batts in each rafters bay) and haven't reinstalled them yet, Because Inspection. So the crew went home.
Aaand there is a 20 pct chance of rain from Saturday night through Sunday evening. 🤮 Which I alerted my contractor to. He hadn't looked at the forecast, unfortunately. So now he needs to find some guys to tarp the roof (and plastic over the gable window bays).... And it is county fair weekend. 😳

Icd get on the roof to help, but eff no. I am 60, and the LESS steep part is 6-12 pitch. No. Nuh-uh.
Contractor and one of his friends are coming Saturday to finish sheeting the roof. Inspector came after work today to inspect and approved, so we are good. Big relief to me that we won't have the whole roof open in case of rain.
With luck, we only get vague sprinkles and the roofer comes back Monday or Tuesday to put the rest of the wrap and shingles on.

Current forecast has downgraded the threat tonight and tomorrow, but upgraded for Monday starting at oh-dark-hundred.
Also, my (licensed) contractor is a one-man band and doesn't carry workers' comp because he normally uses subs. He's asking me to add it, but it is the effing weekend.
