We get a lot of visitors at the office from out of town. Inevitably, we always take them out for deep dish pizza for lunch. I wish Chicago was known for like salads or something.

Much prefer a Detroit style deep over the tomato paste pile that Chicago serves. But then there's StL style ... :-/
I've only relatively recently (within the last two years) discovered Detroit style pizza and I'm angry no one told me about it before then.
My favorite around here is Racanelli's, which has New York style; the best part is I can get it by the slice, and they really pile it on with the bacon cheeseburger pizza.
You know about the King Arthur & Kenji recipes, right?
That King Arthur recipe was a revelation. I always make two, first with cubed roasted sweet potatoes, pancetta, goat cheese, mozzarella with an olive oil drizzle and topped with arugula once cooked, second is a pie of left over smoked meats (brisket with salad verde, pork with Japanese bbq and a drizzle of sriracha and olive oil), garlic, peppers, and onions on both (or friend shallots if I’ve got the patience).
I use the King Arthur recipe for the dough and a modified version of Kenji’s pizza sauce. I’d love to try your more adventurous toppings, but we’re still at the stage where there are two kinds of pizza: cheese and everything else.
I tried the Kenji recipe once, but don't have a good pan for it so the cheese got burnt. I need to get me a Detroit pizza pan.

I use both and usually make two pizzas at once (leftovers!). Making a 1.5x dough fits my 10x14 Lloyd Detroit pan perfectly.
Kenji has Chicago thin-crust recipes too.
When I think of Detroit style my mind definitely goes to Pizza Hut's personal pan pizzas, which were basically the same thing, right?

Detroit style is my favorite, but Midwestern tavern style runs a strong second.
I’ve never had Quad Cities-style and will rectify that whenever I pass through that area again.

I have yet to get my hands on actual brick cheese. Going to Wisconsin tomorrow. Hmmm…can I find it in the middle of nowhere Wisconsin?

Or probably any of the numerous interstate exit cheese shops.
From southern MN to Birchwood…not sure how many interstates we'll hit! Searching for Brick at North Country Cheese finds no hits. Same with Bass Lake.
