  1. Fish Tacos!

    When I make tacos I like to have a lot of small dishes on the table with the stuff:
    Dish 1) Yogurt (0% Iceland Siggi's), lime juice, chipotle pepper and liberal amounts of Cholula sauce.
    Dish 2) Finely chopped red cabbage.
    Dish 3) Quartered limes.
    Dish 4) Salsa 1 - chopped cilantro, Bermuda onion, jalapeño, garlic, and tomato.
    Dish 5) Salsa 2 - chopped mango, pineapple, jalapeño, Bermuda onion.
    Stuff) 3 flounder filets, cut into taco-manageable pieces. Soak in milk, drag thru flour+salt+chipotle pepper mix lightly, fry in hot oil with pat of butter (half-way between Medium High and High, you might get a little smoke in the kitchen here), then set on plate covered with paper towel to soak up excess oil.
    Delivery) Heat multi-grain tortillas on a baking sheet covered with tin-foil (so they don't crust or fall apart). Also, in this weather, heat the plates and forks as well. More Cholula if needed (probably).

    1. One of my employees is from Cloquet and for the first time a couple weeks ago ran into Jessica Lange. He didn't chicken out but said he acted like an idiot.

      1. It's hard not to. I had a little banter with Calvin Griffith in the Jack Murphy Stadium parking lot (!) and it was difficult to keep it "normal".

        We had lunch once years ago at a table next to Stan Musial. Was all I could do to tell my coworkers there to turn around and let him enjoy his meal.

        1. Yeah I've never talked to a celebrity outside of an official function. I always like to think I'd just calmly say, "Hey Mr. (___) pleasure to meet you ..." you and move on, but I'm sure it would go horribly.

          1. Rod Carew and Torii Hunter walked right by me going between fields at spring training a few years ago; I decided not to say anything, and it looked to me like they were intentional about their conversation as it was so as not to have to interact with others. I can take a hint.

  2. Anyone got any opinion on wireless keyboards, wireless printers for offices (mostly text printing, don't need other functions but no harm in having them I suppose), and the best option for turning a non-wireless desktop into a wireless one?

    1. I had to get a wireless keyboard (mouse combo) for better integration into my standup workstation. No problems. Happens to be a Logitech, fwiw

      Also have a wireless printer/scanner (HP Envy) with no problems, and a soundbar/subwoofer that uses bluetooth. No problems.

      1. Also have an HP wireless printer with no issues. I've had it for like 4-5 years so I'm guessing they are better these days. Wireless mouse, keyboards are pretty standard these days.

        1. I have an Epson multifunction printer (several years old) that works fine wirelessly. It, like all color inkjets, is mostly a vehicle for spending money on ink cartridges. And Costco currently does not refill Epson cartridges. Boo.

            1. I recently bought the Canon G3200, which does have wireless printing (unlike the 2200). My family is very happy with it so far and we haven't had to refill any ink yet.

              It seemed like we were changing cartridges constantly on an older printer, so it is very nice having visibility to how much ink of each color is left in the tank.

          1. Epson printers should come with a very strong warning that if the printer heads go out of alignment, the whole damn thing needs to be replaced. (at least, that's how they were, anyway.)

        1. I don't have the experience there, but typically in an office environment where you're primarily printing B/W text, a laser printer is more robust, but I guess it also depends on volume.

            1. I bought a brother HQ4200 back when Dr. Chop was in grad school and it's still cranking out black and white text just fine. The printer acts as a wireless printer when hard lined into our router, which makes it easy to print from tablets, phones, etc etc. I think we've bought two toner refills in 9 years (probably due for another here shortly).
