I've got some pork tenderloins in the fridge with no particular plans. I haven't cooked them often, but I've usually been underwhelmed in the flavor department when I've tried. Anyone have any good suggestions for a tasty recipe?
Do you have a charcoal grill? If so, toss a couple chunks of wood on the coals when grilling.
indeed. quick smoked is the way to go with such lean meats.
i have that and some kind of smoking wood. i forget which though.
Our Omaha Steaks variety pack had some Polynesian pork chops, which was a nice take on it
Opinions on pork tenderloin are divided in this house. I find a good marinade or rub is key to giving it the depth of flavor that keeps me interested. Maple syrup & soy sauce are a good combo that can underpin a lot of improvisation with whatever else you have on hand.
i do have a whiskey barrel aged maple syrup somewhere i think. that sounds like a good use for it. there’s two in the pack, so i was thinking of doing them two ways.
We just added a pork tenderloin entree on our menu at the joint. We cut the loin into 1/2 inch medallions. We grind up dried chipotle peppers and use those as the base of a rub. Quick grill and we serve it with smoked cheddar mashed potatoes and oven roasted veggies. We pour a jalapeno/apple cider jus over the meat at time of service. Honestly, it is my go to entree now when I sit down and eat with my wife.
Also, we end up with some odd sized chunks of pork when we cut the loin into medallions. So every Thursday, our soup of the day is an Asian Pork soup with some mushrooms and cabbage. Lighter broth, medium heat that hits the back of the palate. So good!
I know what I'm having next time.

Yeah, bruh. The tenderloin is so lean that over cooking is really easy, but there are ways around this such as wrapping it in bacon and filling it with cream cheese. The other trick is to remove the meats when they before the internal temp rises above 150. This recipe adapts well to the tenderloins, and produces excellent sandwich fixings. Speaking of, maybe I'll make something similar this week. Tenderloin marinaded in some soy sauce, lots of garlic, hot chili sesame oil, roasted on the outdoor oven and then glazed with steen's cane syrup. Good sandwiches are in my future.
I'm making a gumbo today - yeah 90 degrees outside and let's make a rich soup..... but I'm eating the freezer down because hurricane season. I'm trying to figure out how to make gumbo sandwiches.
if you put gumbo in a bread bowl it will be a sandwich
