Real pleased with the smoker today - we had pork belly smoked on the Pit Barrel Cooker. I got two pieces (~1.3lbs tot) and scored the skin side w/ criss-cross to help render out the fat. For a rub, I used the PBC Meat and Game dry rub. After firing up the bottom briquet tray, I added a cup of soaked mesquite onto the coals, and hung the pork belly on the rebars.
Then a quick pickle of cole slaw in boiling water with some red wine vinegar and honey. Once the meat was done (~2 hrs), I let it rest while toasting brioche buns, then assembled the sammies with some additional hamburger pickles. We've eaten outside on the back patio probably the most of any year so far - a little humid but a nice breeze.
We have eaten out on our patio more in the last year and a half than we did in 19 years at the old house. East facing instead of south, lots of big trees for shade. I had forgotten how nice a patio can be.
A more hopeful night for Twins minor league teams.
St. Paul and Columbus are tied at three through six. Mark Contreras is 3-for-3 with a home run.
Wichita was rained out.
Cedar Rapids and Lansing are tied 1-1 in the fifth. Tyler Beck struck out seven in four shutout innings.
Fort Myers leads Palm Beach 6-1 in the seventh. Sawyer Gipson-Long allowed one run on six hits and no walks in six innings.
Loons with an extra late start in Portland tonight. Game pushed back because its a 100 degrees .
Went grocery chopping at the Hy-Vee today. It's a little bit of a drive but it sure is worth it. Their store brand potato chips are great - a bag of kettle chips for $1.77 (all the flavor and crunch for less than half the cost of a name brand) and a bag of ripples (dead ringers for Ruffles) for 99 cents. On the down side, they were out of the double smoked ham at the deli counter because that stuff's so good they sell out real fast on the weekend. We'll have to go back during the week and buy a pound or two.
Apparently it is a holiday here. I think it is called "Get Drunk in the Backyard and Sing (poorly) as Loud AF Until Nearly Midnight Day"
