  2. I just made what may be the best chicken salad sandwich I've ever had. Leftover white meat from a Costco rotisserie chicken, homemade aioli, diced grilled red onion, diced cornichons, and a bit of garlic powder and smoked paprika, on whole wheat toast, with some pickled okra on the side. The chicken was just a touch dry and bland, being a store-bought rotisserie, but if that was better, it would have been perfect.

        Costco sells big packages of cut-up rotisserie breast meat. Too salty even for me. But when they have leg quarters (8 for $4.99!!) I jump on those.

        Bonus: taking the skin off and crisping them up for delicious chicken croutons.

      Today was a good day in the kitchen for me too. I tried my hand at a parmesean herb loaf. I need to improve my skills, but other than being a little poorly shaped, the results were really good. It was kind of a fun challenge, since the directions were pretty bare and I had to make a few adjustments on the fly given the way the dough was turning out. Probably the first time I've really winged it when baking bread.

      I also made a Tuscan bean stew, which could not have turned out better. Rustic and filing and it tasted just like everything looks like it should when they show you what's in the Italian grandmother's pot in some travel show.

      Bonus: all the herbs came from my aerogarden. A very satisfying day.

    1. Holeymoley…I saw the CoC and was looking at scores for the last month…3-2 with a minute and change, figured they were responding to your callout. Fun last minute, it seems.
