  2. I'm pickling Venison Heart tonight. Four hearts, boiled & cut. Now about to cut an onion and start shoving into jars.

      1. It's not much different than pickled beefheart, or pickled tongue for that matter. Not crunchy with connective tissues like tongue, though. If you've never had pickled beefheart or tongue, imagine the flavor of pickled gizzards or sülze in a slice of lean steak with a finer texture.

        Heart is organ meat without the "Organ Meat" flavor. Same is true for tongue, but that's got a really distinctive texture (crunchy), and peeling them is a pain. Heart isn't great where regular meat is because its texture is so fine, but pickled works just swell.

        I like mine less salty and more vinegary and pickling-spice-y than my recipe, and I put the onion in the jar raw before pouring the brine over.

        It's not a shelf-stable pickling: it just needs about 4 days in the fridge for the vinegar and spices to take.
