  1. Day two of the birthday celebration weekend is underway. Last night we did happy hour at The Loop, followed by dinner at Murray's. With two games going on it was nice to see so many people downtown again, hadn't seen it like that since pre-pandemic. Tonight we'll be rocking the yacht at the casino with Little River Band, Firefall, and Pablo Cruise. Perfectly legal comestibles have been acquired.

  2. The seasoning on my every day user carbon steel pan gave up the ghost last week. Rusty and sad I took the orbital sander to the interior to remove the rest of the old Lodge seasoning, dipped it in vinegar / water, cleaned it well, and began the seasoning process all over again. There are all sorts of nonsense out there about mixing oil with salt + potato skins to season your carbon/cast iron. What a waste of salt, oil and potato. I've taken to using grape seed oil applied in the thinnest possible coating and roasting the pan at 450 for 35 minutes. Let cool in the oven, reapply oil and roast again for 35 minutes. Repeat at least 6 times for best results. The apartment is hotter n a pistol, but it will be worth it.

    1. I recently acquired a carbon steel wok from the Wok Shop in San Francisco.

      Recommended seasoning was to wash well, dry, apply a thin coating of oil (I used Crisco) inside and out, then bake upside down in a hot overnight for 30-60 minute. Then char aromatics (I used onion, green onion and ginger) in it. I did all that and now need to start using it.

      1. I've gotten away from using my cast iron almost entirely favoring my cheap lodge carbon steel and my newly acquired French 12 inch steel skillet. I've also got a carbon steel wok that doesn't get enough use to justify it's place in storage.....

  3. Heading down to St. Paul in a bit to do some pregame food and beverage before the Wild Game tonight. Any suggestions from you all?

    1. What you looking for? A bunch of good choices at a Selby/Western intersection. Want authentic Thai? Lots of locations along University. If you want to eat close to the X, Digidos is decent Italian. Afro Deli is a delight too.

      1. We are pretty wide open, but looking for something refined and/or unique. Close to the X is preferred but not necessary. Researching your suggestions right now.

        1. Apostle Supper Club across from X would fit the bill. But getting a reservation at this late hour may be tough. Moscow on the Hill may be a good bet. It's up the hill from the X, but a very close.

          1. Thanks free! We made reservations at Moscow on the Hill, thinking we would park near the X and walk up the hill to eat. However, my knee was screaming so we just crossed the street to Apostle. Great food. Mediocre piano man. 😉
